Roasted vegetables with feta

I decided to stick to something really simple for this week's recipe - an assortment of oven roasted veggies on top of some left over pasta. I followed the basic recipe outlined here at Good Cheap Eats. I used eggplant, red bell peppers and kidney beans along with some olive oil, salt, pepper, paprika, garlic, oregano and feta cheese. The best part is that you can throw in whatever fresh vegetables (especially in the summer!) you want with whatever herbs and spices you're in the mood for at the moment....and 15 minutes later, dinner is ready! :)
