I sadly haven't had too much time to try out new recipes this week. So for this week's new recipe, I just baked some oatmeal shortbread cookies for a birthday party. They turned out delicious!
I altered this recipe from All Recipes with the following modifications:
3 cups old fashioned oats
1 cup flour
1 cup packed brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 egg, beaten
1 tsp vanilla
1 cup butter
3/4 tsp baking soda
1/2 tsp water
1. Preheat the oven at 375 degrees.
2. Combine the first five ingredients in a large bowl. In a separate bowl, beat together one egg and the vanilla. Add the mixture to the dry ingredients and mix together. Cut in the butter until the mixture resembles coarse crumbs.
3. Dissolve baking soda in water. Stir in the baking soda solution into the dough mixture and roll it into a ball. I found it helpful to kneed the dough with my hands and add a little flour to reduce the stickiness before rolling it into a ball.
4. Either roll dough out to 1/4 inch thick and cut with cookie cutters or press dough into the bottom of one 9x13 inch baking pan. I only tried the first method, which worked out well with some additional flour. I don't know if the second method will work since the cookies did expand a little when baked.
5. Bake at 375 degrees for 12-15 minutes. I found 14 minutes was the perfect about of time so that the cookies were slightly crunchy at the edge and chewy in the center.

ReplyDeleteI tried your recipe!!! The only variation is that I added some nuts, that I happened to have. The dough was pressed into a 9x13 baking pan, baked for 25 minutes and cut into 16 rectangles while still warm. I let them cool in the pan.
